When summer arrives at Whispering Pines Bed and Breakfast we always have guests who arrive on their motorcycles.  Carroll County is the perfect place for taking in beautiful scenery on winding roads.  Our Inn is located in one of only four counties in Ohio that only has 2-lane highways. 

My husband Bill always takes the time to look at the motorcycles wondering why he doesn’t have one himself.  Well this awesome Heritage Softail Harley was Bill’s for several years.  He rode when he got the chance, but not as often as he would have liked.  A couple years ago he realized he needed a back hoe more then a bike and traded it in for another set of wheels.  It doesn’t go as fast, but it’s a pretty color yellow and it gets the job done.  Notice, he is still smiling.  Who knows, maybe when we retire, you will find Bill riding again.

Great Memories from our Romantic Bed and Breakfast

This is a story we will never forget.  One summer day a few years ago, a couple arrived at WhisperingPines  carrying a very large clay pot with a plant of enormous leaves.  We were a bit confused and curious as to why someone would bring a plant on a getaway.  Well, this is the rest of the story.

There is a plant called ‘night blooming cirrus’.  It blooms only one time a year and lasts only during the night.  By morning the plant is shriveled up.  Really, it’s true.  They had this plant for several years and it never developed a bud for a bloom.  Well, this particular year it did.  You guessed it – this was probably the night it was going to open – and they were absolutely correct.  Our lovely couple did not want to miss it.  We understood completely and had them place the pot in a prominent spot in the great room for everyone to witness.  They went out for dinner and returned just in the nick of time.  Indeed, the flower opened in front of our eyes.  It was amazing to see the bud open and expand to this incredibly beautiful and very large flower.   All of us were in awe and sat by the flower for at least three hours.  In the morning it was gone, with only a memory of how nature works its wonder.

Gift Shop Items at Whispering Pines Bed and Breakfast

We have a small gift shop at Whispering Pines, but all items are very unique.  We sell handmade jewerly,  hand thrown coffee mugs, antique glassware and some furniture items.  When Bill has spare time, he likes to dabble in making frames for beautiful tiles that we find.  This is an example.  Every tile is different therefore every frame is different.  Our guests have purchased about 1/2 dozen so far.  This tile is handmade from New Zealand and the colors are very bold.  He does such a great job that I wish he had more time.

Breakfast Recipe from our Ohio Bed and Breakfast

Over years of preparing breakfast for our guests, I have baked a lot of breakfast cakes.  A couple of weeks ago on an upcoming cold weekend, I made a Lemon Bundt Cake and served it with Roasted Pineapple.  It was a hit and the presentation was awesome.  The cake can be baked in advance and kept in the freezer until you are ready to serve it.  Please use a fresh pinapple, not from a can, this really makes a difference in the taste.  When you reserve a guest room at Whispering Pines Bed and Breakfast, please request this delicious starter.

Cake
350 oven
Grated zest from 2 lemons
3 T. lemon juice
3 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
3/4 c. buttermilk, room temp
3 large eggs plus 1 large yolk, room temp, whisk together
2 1/4 sticks butter, room temp
2 c. sugar

Combine zest and lemon juice and set aside.
Whisk together flour, baking powder, soda and salt, set aside
Combine vanilla, buttermilk and lemon mixture
In standing mixer, cream together butter and sugar until light and fluffy.  Add 1/2 egg mixture, combine, then add the rest.  Reduce to low speed; add about 1/3 flour mixture, followed by half of buttermilk mixture, repeat until complete.  Fold batter a couple times to completely incorporate and pour into prepared bundt pan.  You can use nonstick baking spray or butter and flour the pan.  Bake about 45 – 50 minutes.  Remove and cool cake in pan on rack for 10 minutes.  Invert directly onto rack.  Pour half of glaze over warm cake, cool for 1 hour, pour remaining glaze over top of cake.

Glaze
2-3 T. lemon juice
1 T. buttermilk
2 c. confectioners’ sugar
Whisk together until smooth

Roasted Pineapple
375 oven
1 whole pineapple, peeled, cored, quartered.
Whisk together:
1/3 c. dark brown sugar
1/3 c. or more pineapple juice
1/4 tsp. ground cloves
1/4 tsp. cinnamon
1/8 tsp. ginger

Place pineapple in 9 x 13 pan and pour over the mixture. Roast for about 30 – 45 minutes.

To serve, place a few pieces of pineapple next to a slice of cake.  Add a dollop of whipped cream or vanilla yogurt.  Sprinkle powdered sugar and dig in.
